Tender competition for food and beverage at three of Avinor's airports

At the end of September, Avinor will announce a significant tender for food and beverage services at Oslo Airport, Stavanger Airport, and Bodø Airport. Avinor aims to enhance the food and beverage offerings at these airports by developing new concepts and formats.

Norway is an attractive market with many affluent travellers who, on average, spend a substantial amount across various categories at the airport. This includes food and beverages, which is a major focus for Avinor. Now, Avinor seeks to diversify its concept mix to delight a broader range of travellers —both domestic and international. In the years to come, Avinor will work to establish a more appealing food and beverage selection and is searching for partners who would like to take part on this journey.

Simplifying the customer experience
Both domestic and international air traffic are undergoing significant growth, with increasing passenger numbers and establishment of new routes. This implies that options for high quality food and beverage at the airport must correspond with the increased desire for travel. Asian, Italian, and American cuisines are popular in the Norwegian market, alongside healthy concepts, and confectionery.

Travellers at an airport have limited time, making it crucial for each concept to be easily understandable for customers in terms of value for money, options, and service. In line with this, Avinor has ambitious plans for innovation and the use of new technology and seeks partners who incorporate these elements into their concepts.

“We have several large terminals, so we are looking for innovative solutions to incorporate service into these areas. Whether it's pre-ordering, pre-booking, QR codes, or BackOffice technology to support operations, says Iskra Skram, commercial director terminal.

To get closer to travellers and be more relevant to them, we need partners who invest in digital solutions to help us achieve this, adds Joachim Lupnaav Johnsen, executive vice president commercial.

Estimated annual value of approximately 900 million NOK
In total, contracts will be awarded for 47 units: 35 at Oslo Airport, 10 at Stavanger Airport, and 2 at Bodø Airport. These contracts have an estimated annual value of around 900 million NOK during the contract period.

For Oslo Airport, the tender encompasses all dining establishments, including bakeries, cafés, fast food outlets, gastro bars, and casual dining spots, distributed across 16 outlets in the international terminal, 12 in the domestic terminal, and eight outside the security area. Currently, the food and beverage segment at Oslo Airport generates an annual turnover exceeding 800 million NOK from approximately 6.5 million customers. In Stavanger, the annual turnover is around 80 million NOK.

The food and beverage offering are one of the key factors of overall customer satisfaction at Avinor's airports. In fact, this is the first time that food and beverages have ranked among the top five factors of brand satisfaction in our recent surveys among travellers, says Skram.

The tenders will be announced in late September with a submission deadline in mid-January. Contract awards will take place by May 2024, with operational commencement from January 2025.

Welcoming all partners
We are very open to attract new partners and welcome strong Norwegian brands and local actors to the bidding process. We also welcome joint ventures, as some partners operate within that model”, says Johnsen.

Avinor is governed by the Public Procurement Act, which ensures a high degree of predictability for all bidders through transparency throughout the process.

Throughout the process, we provide extensive data in our tender documents to offer a more detailed picture of current turnover and sales per concept, passenger data, and consumer behaviour at each airport”, Johnsen explains.

In summary, the food and beverage segment has evolved positively, and the focus now is on collaborating with partners to create the most appealing offering to exceed customer expectations.

We want to collaborate with partners who share the same goals as us, whether it's service, product quality, sustainability, or the use of technology, Johnsen concludes.

We strongly advise that all stakeholders acquaint themselves with TendSign and the tender process.
